On Friday night, the Deen brothers took the stage to the tune of The Hollies' "He Ain't Heavy, He's My Brother" and charmed the crowd. "What's so funny is that we actually sing that song to each other," Bobby said after they offered their "Hi y'alls."

When Alton Brown, host of the Food Network's Good Eats and headliner at the Southern Food & Wine Festival in Nashville, wasn't pushing sardines, he was cooking up trout, a more appealing and attractive fish, to say the least.
Escabeche is a Spanish method for preparing fish. First the trout is seared, then it's marinated in the refrigerator for a few hours and served at room temperature. Brown's marinade looked absolutely fantastic and seemed to me like a good option for any type of chicken or fish. Here's his recipe, and let us know if you give it a try.

Approximately 7,000 guests attended the festival, and as far as I'm concerned, approximately 6,985 of the guests missed the best part. No offense to Alton Brown, the Neelys or Bobby or Jamie Deen, but the Craft Beers and Craft Foods event, held in a VIP room behind Findley's Irish Pub, was the best part of the entire festival.

I never really got the whole "pay somebody for the opportunity to cook your own food" deal at places like the Pfunky Griddle or the Melting Pot. I saw too many drunks at the old Prime Cut downtown yanking $30 cuts of beef out of a cool fridge and throwing them straight on a red-hot grill while seasoning themselves and their steaks with Bud longnecks. Thanks, but no thanks.
